Joseph's Pita bread
1/3 cup plain Greek yogurt (choose your fat content)
1 Tbs chopped Dill
1/4 sliced red onion
1/2 cup parsley, finely chopped
1/2 cup cucumber, finely chopped
4 oz grilled or baked chicken or steak, sliced
1/2 cup roasted red bell pepper, sliced
Broil a red bell pepper (dressed in olive oil and lightly salted and peppered) until skin partially blackens and bubbles. Let cool then slice into slivers. In a bowl mix yogurt, juice from the lemon, chopped parsley, diced cucumber, and dill.
Cut pita into 2 halves and open. Spread your yogurt mixture into both halves. Place protein, peppers, and onions inside pita halves and enjoy!
