Red Curry Mussels

Steamed Mussels in a delicious red curry sauce with coconut and lime! Spicy and aromatic.
Ingredients:1lb Mussels1 cup shallots finely chopped2 garlic cloves minced1/2 can coconut milkjuice of 3 limes1 bunch thyme1 cup cherry tomato halves2 tsp red curry paste2 tsp curry powder1tbsp gochujang paste4 cup seafood stockInstructions:
In a dutch oven, heat your oil on medium high heat until viscous. Add shallots and garlic cloves and let cook 3-5 minutes. Add red curry paste and mix well. Add stock and bring to a boil. Add curry powder, coconut milk, gochujang, and lime juice. With your bunched thyme tied together (to prevent a mess later), let it sit in boiling stock for 5 minutes. Reduce heat to medium and let flavors meld for 15-20 minutes. Bring to a boil and drop your mussels in and cover dutch oven tightly. Let mussels steam for 5 minutes or until all are completely opened. When serving, top with halved tomatoes and garnish with chopped parsley or cilantro. Don't for get the bread to dip in the sauce!
