Grilled Watermelon Salad
When watermelon is in season it needs to be celebrated. I mean, it's the epitome of Summer. Here is an awesome Summer watermelon salad that will impress your family and friends.
Feta Cheese crumbles
Ground Cayenne Pepper
Cut watermelon into 1.5" slices and remove the rind. Heat grill to 400 degrees.
Season your watermelon slices liberally with cayenne pepper and paprika. Pat it so that it sits on the surface. Grill each side for 2-3 minutes (until you get good grill marks) and cut into cubes or rectangular slivers (get as creatively decorative as you want). Assemble your salad by placing arugula first, crumbled feta, watermelon. Top with chopped or ripped basil and mint then drizzle the balsamic glaze and enjoy.
