Fresh, Fun, and Under 500! Noodle Dish
This simple, yet delicious dish is packed with protein and fiber, filled with bright colors, and ultra satisfying without breaking the 500 calorie mark. The fresh flavors of mushroom oil and lettuce balance out the sweet from the tomato and pepper of the arugula. This dish is totally vegan but you can add a grilled protein if you'd like!
Ingredients:
1 cup rice noodles (chilled)
1/2 cup chick peas
1 cup arugula
5 cherry, grape, or sugar bomb tomatoes halved
1/2 lemon's juice
1 tbsp mushroom infused oil
salt and pepper to taste
Directions:
After boiling your rice noodles, strain in cold water and place in serving bowl. mix in chick peas, tomato halves, and arugula. Squeeze half a lemon's juice and drizzle mushroom oil then mix until well coated. sprinkle salt and cracked peppercorn to taste.
Add on:
Add your favorite protein to the dish if you'd like. A simple grilled steak fits very well.
Pro tip:
make your own PURE mushroom oil (what we used for the recipe). On a baking pan lined with foil, slice 2 cups of mushrooms about 1/8" thin slices and line evenly in pan. Bake in oven at 200 degrees for 45 minutes or until you see the mushroom start to sweat. Carefully drain resulting oils into your pasta dish for a wonderfully, earthy flavor!
