Easy Grit Cakes

If you love the South then you know that grits are a staple in the pantry. Over the years grits have transformed and has become a staple breakfast and dinner addition to many recipes. Here is a crispy fried variation of the southern staple that goes very well with breakfast and dinner recipes.
Ingredients:1.5 cup Stone ground grits1 cup heavy cream1 cup sharp cheddar4 cups water1 cup flour3 eggsEquipment:deep fryer (optional)9" square panInstructions:
In a saucepan bring grits and water to a boil on high heat, once brought to a boil remove from heat and cover for 15-20 minutes as you prepare the other components of this recipe. Uncover and return the grits to a boil at medium high heat making sure to stir frequently to prevent clumping and burning at the bottom of the pot. When most of the water is absorbed add cream and cheese (salt to taste). Pour grits into 9" pan to cool and congeal (place in refrigerator or freezer until congealed). Once the grits are firm enough cut into squares or triangles. Dredge your grit cakes in flour, egg wash, then back in flour and fry until golden brown. Best to use deep fryer as you will get an even cook all around but you can pan fry in a deep pan of vegetable oil as well.Best with:
The grit cake is so fun and versatile that it can be prepared and paired in many ways from your typically shrimp and grits to being smothered with a sausage gravy. We prepared it with pan seared scallops and sweet corn in a spicy tomato sauce.
