Coconut Lime Shrimp

This Thai inspired stew is great for the seafood lover. The crisp flavor of lime and cilantro cut through the creaminess of the coconut to create a well balanced blend of flavors!
Ingredients:
1lb Peeled and deveined shrimp
1/2 cup shallots finely chopped
2 garlic cloves minced
1 can coconut milk
juice of 2 limes
1 bunch basil
1 bunch cilantro
2 tbsp butter
1 jalapeño pepper
1 cup seafood stock
Instructions:
In large saucepan, cook shallots in butter on medium heat until translucent (6-8 minutes) add garlic and cook another 2-3 minutes. Add stock and bring to a boil. Once at a boil, tie your basil and cilantro together and let it simmer in broth (leave some cilantro for garnish). Add coconut milk and jalapeño pepper and let boil. Add shrimp and take heat down to medium-high and let simmer, stirring occasionally, for 8-10 minutes until shrimp is cooked. Remove bunch and serve!
