Cauliflower Steak

This easy Vegan dish is delicious and makes the perfect lunch for the calorie conscious!
Ingredients:1" thick slice of cauliflower1 onion, sliced1 Roma Tomato, sliced2 cups baby spinach1 cup canelinni beans2 cloves of garlic, mincedbarbecue rub1/2 lemonPreparation:
Preheat oven to 375 degrees. Slice cauliflower head into 1" thick steaks. Slice tomatoes and onions
Instructions:
Brush olive oil onto both sides of the cauliflower steaks and pat barbecue rub onto it. Grill both sides for 3 minutes (or until grill marks are present) then place on tray and into the oven to finish as you prepare greens and beans. In a sautee pan, heat olive oil at medium high and sautee onions, garlic and tomatoes until transluscent. Add spinach, reduce heat to medium low, and cover. When wilted, stir in salt to taste. In a separate pan heat your drained beans on medium high heat and squeeze the juice from half a lemon into pan. On your plate lay the spinach, top with beans, then place your cauliflower steak on top and enjoy! *Feel free to add a protein if you are not vegan*
