Move over, espresso martini. There’s a new caffeinated cocktail in town, and it’s here to stay.
This cocktail has that tropical feel to it with a twist. The matcha adds an earthiness to the pineapple and calms down the drink overall, making it perfect for a happy hour cocktail on the weekend or served with brunch.
Use What You Have
The great thing about this cocktail recipe is that you can use whatever white and dark rum you have on hand. It's totally fine to switch out the rum and experiment with different flavor combinations, here.
Use Unsweetened Matcha
With the addition of the simple syrup and coconut cream, we don't want to overwhelm the cocktail with too much sweet. It's a good idea to use unsweetened matcha powder here to tone down the sweet flavors, and get that perfect balance.
- 1 oz Bully Boy White Rum
- 1 oz Plantation Dark rum
- ½ oz. pineapple juice
- 2 tablespoons simple syrup
- Splash of Coconut Cream
- 2 tsp matcha powder
Combine ingredients in a shaker and pour over ice.
